Decided to try some baby backs. First time. Always do BB's and brisket. I think someone on here said go 2-2-1 with them. Any advice? Here they are before they went on the smoker. Using apple wood chips. Will see how they go.

Grew up on Iron City and Yuengling in Pennsylvania. I'm a transplant to Lousiana. Back to the smoker. If it turns out crappy, guess I will still post some pics. Going to start the Hurricane Party early and get ready for Gustav. I guess I better enjoy it tonight, work called and have to work the weekend and holiday is cancelled. Dang

I like to push it to more of a 2.5 (3) - 1 - 1 method but I also prefer to have just a liiiiiittle bit of tension between the meat and the bone instead of them sliding off the bones while I'm unwrapping them.

Either way smoke + baby backs = drool on the computer.

Now I might have to add some ribs to my list of things to smoke this weekend.....hmmmmmmmmm.....somehow I can't get mad at you for it though. :)

Well I kind of got screwed on my ribs. About 3 hours into the 2-2-1, I got called in to work to deal with the Gustav stuff. Just got home at 8:30 this morning. Gave the wife instructions and asked her to finish them. She said they were tender and came apart nicely, but they don't look they pulled back too much on the bone. She was nice enough to take some Q-View. Haven't even tried them. I guess better luck next time.
 
Curiousity got the best of me. Warmed some up in the oven and they actually came out pretty good. They came off the bone pretty easy. Wife did a good job filling in. Might have to warm up some more and skip sleeping...Ah ribs for breakfast
