So I was at work last week and my boss comes up to me and says " I hear you're good at smoking ribs". I said well I don't know who you're getting your info from but I don't smoke ribs very often and when I do its spare ribs.. he says well I want you to smoke me a rack of baby back ribs. So I says ok sure. Not he is diabetic and sensitive to heat. So I'm unable to use me normal rub. So I change up the rub a little and rub em down yasterday and cling wrapped 24 hours. Get home today and into the smoker the rack went. I don't have a finish product pic yet but here's a couple from the start.. when I hand him the rack tomorrow I'm gonna tell him that he owes me a fat raise.. lol

This weekend will be a busy one. I'm smoking for two different events. One wants pulled pork the other wants pulled pork and brisket. So I told the boss man I would bring him some next tuesday. Gotta butter him up a little.. lol
