since the smoker was already dirty from smoking a turkey, i'm gonna do some baby backs tonight. rather than buy a ton of spices for a rub, i bought a little canister of Weber's Sweet and Tangy rub. i have both hickory and apple wood, which one would be the better to use?

on a side note, is it just me or does anyone else have a bitch of a time getting the membrane off? they make it look so easy on tv and in youtube vids. haha

alot of ribs i've bought the last couple years have the membrane removed already...you might think the membrane is there but if you dont have a somewhat thick and semi opaque piece on there its probably already removed 

if there is a membrane use a towel to peel it off, very slippery without

Hickory is my "go to" wood.  Pork will stand up well to hickory or a hickory mixed with a fruit wood.

Maple and oak work well, too.  Part of the fun is experimenting and finding what you and your loved ones might like best.

Missed it your post?  Sorry.

A good trick for the membrane.  Running the membrane side under hot water for a minute or two makes it easier to remove.  Still tricky, but much easier.

As mentioned by Doug, sometimes you get ribs with the membrane already removed.

Thanks for a good tip Venture,

I'll try that tomorrow when I do my 3 racks.  (timing is everything)

I've found some racks that peel just like on TV, and some that need skin hooked to a dozer or something. 

When I hit the ones hard, or impossible, to pull off in short time, I just take my sharp knife point and score the heck out of them.

I really don't notice the difference.  Bones are shiney either way when I'm done eating.
