Here We All Are Folks,

Back here at our favorite internet site - SMF.

Did some babies today - timing was a modified 3-2-1. Times were about 2.66-1.75-.75 Hours.

The big test was that half the ribs were sprayed with my old reliable 3 parts apple juice to 1 part bourbon. The other half were sprayed with swalker's 3 parts apple juice to 1 part Captain Morgan's Original Spiced rum. Both sets had been rubbed last evening with my rub and smoked with hickory. Temps in the GOSM held between 225-240F. I sprayed every half hour after the first half hour. I also put a bit of the respective sprays in the foil packets. They were all glazed with Bull'sEye BBQ sauce that had been thinned with a little apple juice.

I managed to keep them separate and had them on different platters when serving, which was tough because they looked the same. I told the family members and guest that the ribs on each platter were different and asked that they take part in a taste test. We could all tell the difference. The captain sprayed ribs had a sweeter finish, and they could also taste the difference in spices. I do not have a preference as both are good. One family member and guest preferred the Captain's ribs. Mrs. Meowey preferred Jack's ribs. (I guess you know that Jack will always be welcome at our house.)

Has anyone else tried Captain in your spray? If so, what do you think?

As I said earlier will be smoking a ham for Easter with Apple juice and Captain Morgan.

Will let you know what we think of it...sounds like it is good on about anything doesn't it....

Very fine looking vittles there. IMO it just couldn't get much better, "Q"ed ribs and cucumbers and onions. Gota love it, can't wait for the fresh veggies to come on.

Yes, You have figured out that my school is on spring break. The town is quiet as about 30% of the population head for warmer climes. Last year we went to Murrels Inlet, SC to attend a golf school. This year we decided to vacation at home in the beautiful Adirondack Mountains. (We are going to get 3-5 inches of new snow in the next 36 hours.) We will be attending the national Elks convention in Charlotte, NC in July, so we decided to make only one trip south this year.

As far as samples, I know Fedex would make delivery. Unfortunately for you, all that's left are bones.

Dem bones Dem bones...lol, they look wonderfull Meowey, gonna have to try the same thing next time I do ribs.

This past weekend I did the Jamacin Jerk chicken quarters and sprayed them with a reduction that I made from pineapple juice and orange juice with a shot of spiced rum that I reduced by half, have to say it went really nicley with the jerk spices.

The dressing is :
1 part sugar
1 part cider vinegar
5 parts 2% milk
salt and pepper to taste

(Old family recipe)

This way you can adjust quantities depending on how much you want to make.
