I did three racks of baby back ribs today for my wife's birthday. I bought them from Costco and cut each rack in half. This is my first effort at Q-view. Hope it all works out. I used apple wood chips at 225 degrees. I used the 2-2-1 method but it

really worked out to 2, 1-3/4, 1-1/4. They tasted fine but fell off the bone too easily. I like a little tug. I just love being able to eat my "mistakes." Next time, I'll probably just foil them for 90 minutes.

 
Here are the racks after cutting but before going on my GOSM smoker. I did no rub as my wife doesn't care for any.


Here are the ribs after being in the smoker for two hours but before I wrapped them in foil.


Here they are after 1-1/4 hrs. in foil.


This is after foiling but before I put some sauce on them for the final 30 minutes.


Here are the finished ribs just before being sliced. No, I hadn't already eaten two of the half-slabs. They were on another tray.


Here are a couple sliced before being devoured.

Nice looking Smoke!

I usually don't foil. I like to cook them the entire time in the smoke. I like simple ribs too, but I do usually put salt, pepper, and garlic powder on them.
