Baby Backs and CSRs today

    Hey all,

    Today, I am firing up "Reefer Madness" and doin' up BBs and CSRs , 25 lbs total.  Conditions are crap here in WI.  Mother Nature is suffering from PMS or something, we got a whistling north wind with 35-40 degree temps and .............SNOW.  We had a snow squall about an hour ago.  Nothing major, but snow none the less!  Anyway, I will post pictures in a minute off the iPhone.  I have a video for you to watch.  It's about Reefer Madness firing up.  Nevermind me, I sound like a dork and I ramble like a moron.  I also noticed I sound a little bit Canadian, do all Wisconsinites sound that way?  But, anyway, it's smoking away, and the neighbors are drooling cuz the smell is insane!  Here is the link to the video:.  Have a good day, eh?

    If you look closely at the photo, you can see it snowing................crazy!!!

    Okay, I noticed that some of the CSRs are boneless. Those got done first. I pulled those at 170° IT.

    Yea i see snow on the smoker when i blow up the picture. We're at a drizzly 50 degrees out which i'd rather have your weather. 

    Must be baby back ribs day..i'm only doing 1 rack and it's just starting to recede on the bones...Dinner is soon!

    BBs were great as were the CSRs.  Everything was moist and delish.  Great smoke ring.  I didn't get any more pics but will post a picture of the CSR leftovers tomorrow.

    LEFTOVERS!!!

    Here is a pic of a CSR.
    The smoke ring is really deep. I pulled these at 180 - 185 degrees, I believe. They were very tender with a nice chew but not too chewy. The fat rendered down to a silky smoothness. Some of the meat had an almost ham like texture to it. In my opinion, this is the only way to prepare CSRs. Most people roast these in the oven and to me, are crappy. As usual, BBQing this crappy cut of meat transforms it into an absolute treat. Bone in CSRs are fairly popular around here and really cheap, $1.89 a lb. And the ones I get from Sam's are huge! I will continue to make these, they're delicious .
