Greetings to all!

I got an early start today. I put a butt on early. Planning to take that to work on Monday and with no time tomorrow, I had to do it today. It's resting in the cooler now. I'll put it in the fridge later, but should I pull it tonight or wait until Monday morning? It will be cold then.

Here's the butt pre-cooked, with rub and prior to resting:







On to the ribs. We have a new grocery store (Fareway) in town and they have an incredible meat department. In descending order: pre-cooked, prior to foil, finished and a couple of bites taken out. Seriously, I had a tough time getting things from the smoker into the house. Whether it was pets or people, the meal was half gone before I had a chance to sit down.









I also made Dutch's Wicked Baked Beans. In a dutch oven...



Next weekend, I'm thinking about shrimp...
 
Those are some of the meatiest ribs I have ever seen. They look like pork chops. I bet it was delicious. Good job.

It all looks great. I would suggest pulling the butt while its still warm they pull much better that way.
 
Looks great! You just can't beat ribs and Dutch's beans.

I pulled the butt, here's the end result:

Here's the recipe for the rub I used for both the ribs and the butt:

1/2 cup dark brown sugar
2 TB kosher salt
1/4 cup paprika
3 t black pepper
2 t cayenne pepper
2 t onion powder
2 t garlic powder
1/4 cup chili powder
1 teaspoon cumin

Mix all ingredients and apply generously to meat.
 
Yes I would pull the butt too. Now for thm ribs they have to be some special cut cause I have never seen ribs with that much ,meat on them. Now they do look like short cut pork chops thou. I do have a bone in pork loin that almost looks like them.
