Started these at 9:00 am. Used a brinkman rib rack and had to cut off 1 bone off of two of them and then cut the 3rd rack in half. Forgot to take a picture when they were in the rack

Here they are after being rubbed overnight

Did 2 hours in the rack then they will be done with the foil in about 25 min (1 hour with butter and beer in the foil) then about 30 minutes back in the rack before I'll be packing them up to bring to my brother in laws where I'll throw them on his weber and sauce them. More qview to come
 
Should be tasty! Decided to forgo the mini today and use the 18.5 WSM. To big of a load for the mini with the sides I'm smoking too!

They were awesome. They lost a little bit by pulling them early then reheating but best I've made. Used a bobby flay rub recipie then a shot of coors light and butter in the foil and wow.

Smoke went well too. Ended up getting access to a Truck full of Apple wood too from my brother in laws neighbor so that was pretty awesome. Looks like I'll be ready for the first couple cooks with the side fire box I'm building
