I have been reading a lot of posts about ribs and I have a few questions. Thanks in advance for the help guys.

1. Do you have to trim BB's or only spare ribs?

2. Going to use yellow mustard, then Jeff's rub. Do I need the mustard?

3. Going to try 2-2-1, so can I spray with apple juice every half hour?

4. When I foil them do I spray the foil or ribs prior to them going in there?

5. Do you use thermometer for ribs or are they normally same size and done in about five hours?
 
I'll be really interested in reading the answers you get. As for me:

1. I haven't trimmed any of the BBs I've done, but will when I try spares.

2. The mustard will help to hold the rub on. The mustard will lose it's flavor during the cook.

3. I sprayed my BBs each hour and added about a 1/4 cup when I foiled them.

5. I didn't use a thermometer, just went by time and looks. I didn't want the meat to fall off the bone, needed to have just a little tug to to them.
 
1- You don't trim BB's but remember to remove the membrane off the back of the ribs.

2- I never use mustard on my ribs but lot of people do. Like they say it just holds the rub on the meat and the flavor of mustard does not come through on your meat.

3- Yep you can spray them how ever often you want just make sure that your smoker comes back up to temp quickly enough after you open. If you are opening it all the time and it takes forever for the temps to come back you may have to lengthen the smoking time since your heat will be lower or just cut back the amount of times you spritz them. Or you can have the other problem like I have with my UDS. Every time you open the lid your lump gets more oxygen and the fire gets hotter so I try to get that lid open and closed as fast as I can. I usually try to drop the temp a bit before I have to open it so when I open it it comes back up to the temps I am looking for.

4- Put the ribs in the foil then spray them but don't spray to close or hard you don't want to spray your rub off the ribs. Personally I have stopped spraying mine when I put them in the foil I just add brown sugar, honey and butter.

5- Nope I don't use a thermometer on ribs to hard to probe them with all the bones and very little meat. Just go by looks and feel and give them the bend test. They should bend over but not fall apart. That is unless you like them fall off the bone done. I personally don't like them to totally fall off the bone. Hope that helps.

4 - I like the brown sugar, honey and butter idea.  how much do you use and do you finish it with bbq sauce once you take them out of foil?

5 - I cooked my ribs few weeks ago and posted some Q but compared to everyone else's they looked raw, but they were unbelievable.
