I'm going to try my first rack tomorrow, I don't want to foil the first time.
My question is what do you look for when they are finished? Temp (what temp) or tenderness.

I usually get em prepped while the smoker is coming up to temp.... 225-250* .... As far as telling when they are done, ya can do the toothpick test ( if a toothpick slides into ribs with no resistance), the bend test some folks use ( http://www.smokingmeatforums.com/a/the-bend-test-for-ribs ) or ya can also usually see the meat at the end of the ribs kind of shrink or pull back exposing the tips of the bones !

I do a bend test like WaterinHoleBrew linked to...but it also depends on how you like your ribs...leave them on longer if you like fall off the bone.
