First post, my name is Jason I live in Scottsdale AZ.  I've done ribs a few times on my Cheapo Brinkmann.  Actually it was free.  And I just purchased and MES-30 Gen 1 (YAY)  from Amazon.  And I went ahead and bought the AMNPS too.  I am committed to serving a small dinner party some BBQ in a few weeks.  I'm pretty much a newbie at this, so I will probably have some questions about smoking a brisket in the MES.  I will probably do some ribs in the Brinkmann at the same time.  I opted for the MES, for 2 reasons.  I want something more set and forget.  And, we have a cabin up north.  In the summer, when we use it most, it's pretty customary to have open flame restrictions due to wild fire danger.
