howdy from Montana!!

not new to grilling and smoking, but did purchase "chargriller"....... charcoal grill.

im wondering if the side fire box is an absolute add on to get really great smoke?

Do you folks think, one could arrive  with  the same results by piling coals at one end of the

unit, ( by the air vent)and try to roll at about 225 for 4 hours, cooking swift brand baby backs.
 
Hey Dave! I've been cooking like you've mentioned for a while on my original smoker. The fire box burned out and just didn't replace it. You can cook the way you mentioned but I think the offset fire box it better for the low and slow. Cooking beer can chicks works good with the indirect method. Ribs I would want the heat as far away as possible. But hell it could work for you give it a shot and tell us what you think. Don't forget to show us some qview

im 61 yr ooooold so who cares..hahahaaha..........

thank you  for the response. (ill probably go in to town and get the firebox today)

I have a commitment to cook for a cow-branding, in 3 weeks from now so I need to get

it together, and see if I can hold that perfect 225F, with   the add on firebox.

ill be smoking up 8 sets of ribs. It sounds like ill have to move the ribs around at the 2 hour mark

unless I can distribute the heat evenly ( thinking of a baffle to cover the firebox opening into the cooker/grill??
 
I didn't have a baffle in my smaller smoker like the one you have. I did use a rib rack to cook multiple racks at once. You can get them at any store.
 
brooksy..........I didn't get this reply over to my email so , im sorry  for  the day late dollar short deal here. Hey thanks for  the comebacks on my questions . I did git   the firebox yesterday. Ill try something simple and see what  the real deal is on keeping   the heat at a solid temp.

I invested ina digital thermometer also......................so here I go man.....................

what are you and  the kids doin for   the wkend??
 
No kids this weekend. They are with their momma. Its my birthday weekend and I get to on my girlfriends future massage therapy building. Maybe cook some things in the big smoker. I'll post some pics

birfday !!!!!!!!!!!!!! ohhohhhhhhhh. so how old now ? I had the 61st back in march so im done with the birthdays for this year amigo.......

hava great wkend bud!!!                                     PS.............. by the way, I moved gravel for this guys driveway yesterday, and today there isa 30 pack of beers on front porch !!!!!!!!!!!!!!!!!!! thatll help with tomorrows smoked ribs.............later
