Attempting an eye round smoke for the holiday w/ Q-view!

  1. Thanks to gypc's thread here, I found a 5 lb. eye round this weekend at BJ's Wholesale Club for just $13 so I thought I would give it a shot!

    Started the marinating process last night, same recipe as gypc with soy sauce, worchestershire, oregano, thyme, salt pepper, garlic, and lemons.

    Sorry for the bad pic, I must have moved.



    It went on this morning around 11 AM to be going for about 8 hours (I hope). Colas going strong, a bit over 250 w/ maple wood, I hope thats a good choice because it is all I had.




    Just a quick pic of my setup, basic Brinkmann's smoker.....the maple is already billowing!

    So far so good. I'd be curious how it comes out. I got a rump in the freezer and I'm concerned about the leaness of it.

    Hope to see some good q-vue as that thing cooks on. I've also got an eye round in the freezer and am contemplating what to do with it.

    Gonna probe it soon and start the whiskey/apple juice spritz
     
  7. ok so it was done after about 8 hrs....
     
  8. Slicing it up now to make roast beef sammies.....gotta go super thin with it.
     
  9. On a plate waiting to be put on a sammy with onions/peppers/mushrooms/cheese

    My only complaint is that it is a bit salty. Probably because I used soy sauce AND salt (ooppsss).

    How did it come out? Dry? Moist?
     
  11. Super thin, it was delish. The thicker I sliced it the drier it was.....nothing a little Au Jou juice didn't fix though. :)

  13. I had taken these pics the same day but had some issues getting them from my camera phone to my computer. Next time I do a Q-view it will definietely be with 5 megapixels instead of 2, but for now this will have to do.

    This is the eye round after an hour of rest in the cooler, how do I get those wonderful juices to stop running out?? Fortunately, I was able to salvage them for the au jou.







    It made for some YUMMY thinly sliced roast beef so this is what the sandwiches looked like once they were in the bun. [​IMG] We fried up some onions, green peppers and sauteed mushrooms to go along with a pre-made packet of Au jou and I added the drippings from the meat after resting which gave it a nice touch!

    AWESOME looking sammies! Congrats on a great smoke! Pics were fuzzy, but I think most of us can see thru the fuzz...
