Hey there ,

It's been really too cold here in Ohio this winter for me to do much smoking this year. So I decided to do these in the oven instead.

We have been making these at work and putting them in a foil pan and selling them as an oven ready item for our customers. They're quick to make and they sell quite well, and have an awesome flavor. I just can't wait to be able to put them on my smoker.


The boneless thighs  have barbecue rub sprinkled inside with fresh asparagus and sliced mushrooms inside.

On the outside they are sprinkled with more rub and wrapped with precooked bacon.


Then place them on foil pan put them in the oven At 350° For 30 to 35 minutes.

Stuffed chicken thighs are always tastey and anything wrapped in bacon is good, bet they are even better done on the grill. Did you blanch the asparagus first or just use mostly the tips?
 
Nice looking meal , I agree about the Cold.  My old bones are hurting this year... got 3 Briskets and a Butt to do and can hardly wait for better weather.

Love bacon wrap anything and you did great with the thighs and the asparagus. Temps are lookin up for you and us up here.  near 40 today and tommorow!!! Reinhard

Asparagus, mushrooms, chicken thighs, bacon....sounds like a lot of really great flavors and textures. I can see why your customers love them!

How long and at what temp do you precook your bacon so that it stays pliable but then cooks completely with the chicken?

I cant lie!  it was pre-cooked bacon from work...Oscar mayer I think...it was the right price....outdated.
