Give this one a try, sounds like it should be right up your alley.
Rub ribs with toasted sesame oil then season with Chinese five-spice powder, salt and pepper. Cook with your preferred method, 3-2-1 or whatever. Now comes the yummy glaze.
Cube a whole fresh pineapple and saute the chunks in butter for a 5 minutes. Add a cup of soy sauce (personally I like Ponzu sauce if you can find it), 1/2 cup dark rum(optional), 1/4 cup ketchup, 3 TBLS rice wine vinegar, 1/4 cup brown sugar, 2 smashed garlic cloves, and a 2" piece of fresh ginger. Spice it up with some red chile flake or whatever you like. Simmer this sauce for 20–30 minutes until thick then blend it until smooth. Sauce your ribs the last hour and serve some on the side.
I've made these before, although in an oven, and they are very good, and definitely a departure from the usual bbq flair.
