HI, my name is Jay

(Group - Hi Jay!)

I have a smoked meat problem.

(Group - We understand....were here to help, you can tell us...)

I cannot find the smoked meats I truly enjoy - even here just outside of Charlotte, NC.  So...I've decided to make my own.  In the past I've smoked with the Brinkman Smoke and Grill which has served me well, but alas - when I was in Upstate NY - it couldn't produce the Baby Back Ribs I was craving.  So, we purchased an Electric Smoker.  Even after several tries, we decided that this wasn't producing the results we wanted.

Now that we're here in the Carolinas (and a Garage!) I can set forth to making my own version of a multi-purpose smoker that will meat my needs!

Since I've been a mere lurker here for sometime, I'm in awe of the collective brain-trust here and look forward to learning from you.
