I did a meatloaf today. I've been neglecting my mini and SMF for the last few weeks, so it was time to redeem myself.

Meatloaf:
2 pounds ground beef
1 cup breadcrumbs
1 egg
1/4 cup of milk
1 teaspoon salt
1 teaspoon pepper
1 diced onion
1 diced bell pepper
2 tablespoons catchup
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce

Sauce:
1/4 cup catchup
1/4 cup barbecue sauce


Homemade charcoal chimmney

Looks really good, Ryan. Meat loaf is one of our favorites. A couple of weeks ago I tried Abi's recipe form Jeff's book and it was great. Especially the sauce with brown sugar. Keep up the good work. Joe

Just what I was looking for.

A killer meatloaf smoke and looks like you nailed it.

For those of us whose money is a bit tight, but still want to fire up the smoker, this is a great way to go.
