Apple juice in with pork shoulder when wrapped?
Most, or at least many do! I have...worked for me!
Yep, I have a Sprayer, filled with 80% Apple Juice and 20% Apple Cider Vinegar, also a few shakes of Tabasco Sauce in it, That i use on everything that I smoke. This adds some moisture and flavour to the product. Works very well on pork.
For what it's worth , I never wrap my Meat while cooking : example , my Butts and Ribs :
to a finish temp. of 200F
in for appox. 6hrs. and glazed with Turbinato Sugar.
