They are just a prototype so they weren't stuffed with anything worthwhile.  I wanted something fruity and wanted it right then so I mixed some preserves with panko and rolled em up lol.  Doesn't taste good with the preserves, but would taste very yummy with the right stuffing; they'd look cute--especially BBQ'd.

I cut the chops about 1/4 inch thick, threw in a quart size baggy, zipped closed and hammered flat with a mallet until a big disc.  Then spread the filling in and rolled them up.

Next time I'll use a tasty filling, truss each of them up (a lot of work but would be cute), and BBQ or grill em.

Wow..... I bet some sausage stuffed in there would be awesome, maybe a wrap of bacon?  Fancy finger foods, call it "southern sushi"!

Some apple pie filling or maybe whole cranberry sauce........

I agree, Jimmy Dean sausage (your favorite you make fatties with).  Then wrapped in bacon mmm--bacon would be a huge improvement and perfect for an appetizer, just as it is for moinks and abt's.

Hehe, I like that "Southern Sushi".  (I make maki sushi with imitation crab meat, avocado & cucumber, so I know what you mean!)

Spiral Stuffed Southern Sushi?

Maybe a layer of cheese before adding the stuffing?  Maybe go atomic with jalapeno in there as well!

Oh well I just googled it and found some have already had the idea of pounding slices of chops thin, stuffing them, rolling them up and slicing them.  It's always disappointing when I come up with an idea and it has already been done, but often it isn't always identical and I still have some uniqueness.

Edit: well I found the name for these many are using:  "Pork Roll Ups".
