I know some people use stainless steel rib racks that'll hold multiple slabs of ribs but if you're not short on cooking area, is there any point in using them? I figured you'd want the broad side of your ribs to lay horizontal rather than vertical. Anyone have some insight?

I have some rib racks but only use them if space is an issue. I prefer to have them laying down. If you wrap your ribs using 3-2-1 method you will have issues with them fitting in the racks when wrapped anyway. Just my .02 cents worth.

I think I would cut the ribs in half to fit the grates before I would smoke them in a rib rack.

While we're on the subject of ribs..... what are your favorite sides? I already have baked beans and home made french fries on tonight's menu, but any other favorites??
