I am starting to question the accuracy of my MES thermostat.
Typically, briskets were taking roughly 1.5 hours per pound at 225. I would start a 10lber at 4:00am and they would not be finished until 7:00pm or later.
The last two times I smoked a brisket, I decided to start them around 12:00 am and up the temp to 240. Both times the brisket was hitting 160's withing 4 hours and IT of 195 by 8 -10 hours turning supper in to lunch.
I am starting to question the accuracy of the thermostat on the smoker.
Have any other MES users had issues with the thermostat?
