been looking all around supermarkets and the like for some pre-packaged sausage meat with no luck. The stuff we have at the supermarket that looks like the JD packaged stuff is friggin dog food

if the JD wasnt available to you guys in the states, what kind of commercial product would you use instead - maybe mix together supermarket pork and beef mince?

Not an aussie replying, but hoping this may help.

Is it just plain ground pork that is available to you?

If so, may I suggest mixing in a few spices to make it your own that you like with the plain "dog food" available to you. Personally I have never used JD or any store bought brand sausages for fattys, we make and season our own ground pork/venison sausage in a few different flavors and that is what we have used for fattys.
 
Hey chris...spoke to my friend in melbourne last night...she said to ask you if you are an aussie ocker???

Anyway...I agree with mossy, pick up some ground pork add a touch of this and that, (I add ground veal also)...and make your own signature JD type mixture. I am sure it will make a great fatty.

Then again there is always smoked Koala...I hear that they are filthy beasts prone to eating all of your gum tree leaves and peeing on the locals. But they are mighty cute little fellas.

Jimmy Dean "fatty" clone recipes

These would be really easy with ground pork from the store and you could make them as spicy as you want!

Sage
16 ounces ground pork
1 teaspoon salt
1/2 teaspoon dried parsley
1/4 teaspoon rubbed sage
1/4 teaspoon ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper
1/4 teaspoon coriander
1/4 teaspoon MSG (such as Accent flavor enhancer)

Hot
16 ounces ground pork
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon rubbed sage
1/4 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
1/4 teaspoon coriander
1/4 teaspoon MSG (such as Accent)

Maple
16 ounces ground pork
3 tablespoons maple flavored syrup
1 teaspoon salt
1/2 teaspoon MSG (such as Accent)
1/4 teaspoon coriander
Combine all ingredients for the flavor of your choice in a medium bowl. Form the sausage into patties and cook in a skillet over medium heat until brown. Makes 1 pound of sausage.

Forgive my naivete (spelled right, despite the spell checker!), but don't you have breakfast sausage (i.e. seasoned ground pork that is fried for breakfast) in Australia? Both the US and Australia are former colonies of the British Empire, don't you guys have sausage there?

bbqchris, I make my fattys, with the sausage I get from my local butcher here, and all they use is salt and pepper for seasoning. I like it better than the JD personally, but that's just me.
