Another turkey temp question

22lb bird. Doing the maple cure again. Planning on the spatchcock method this time. Looking for a time and temp recommendation.
 
Hi there and welcome!

I know 14-16 pound birds on a vertical roaster rack at 325F hit the IT of 165F in the breast in under 4 hours.

I would assume that a 22lb spatchcocked bird would do the same in under 4 hours since it cooks even faster.
Also if you do 325F you will very very likely get edible if not crispy skin. Under that temp and be prepared for leathery skin.

I dont think my 40" masterbuilt will heat to 325. I think 250 is max. I will have to check.

275F is the max for an MES.

Some guys have reported having edible skin with the MES at 275F, I just could never get my setup to do so... until I rewired it and went with a 3rd party controller :D

You might have a better chance of having edible skin if you go 275F, remove the water pan, use the bottom rack, and lay the spatchocked turkey skin down on that rack.
 
Well I chickened out and smoked it whole. I will be trying a spatch though, maybe new years when the only deadline is my own. The maple bbq came out great again, the family seemed to like it alot. Forgot pics again, maybe 3rd time will be the charm. Thank you for the advice...
