Just stumbled across this site....VERY nice! Wish I found it earlier as there seems to be immense amounts of information here that could have saved me lots of heartache (and heartburn.) I have been smoking meats and cheeses for about 5 years now. I started off with a Traeger 075 that I got one heck of a deal on, but that is another story for another time. I was looking for something a little fancier so now I am the proud owner of an FEC100 and I could not be happier. For the holiday weekend I smoked two pork butts, 6 racks of baby backs and two pork butts...all turned out really well. I have flapped my jowls too much, time to go read the forums and check this site out a little more.
