Hey all!

We'll get the introduction out of the way first.

I'm 33, married and live in Devils Lake, ND. I am a Sgt. at the Lake Region Correctional Facility here in Devils Lake. I've been browsing the boards since X-mas and am brand new to smoking. I was thrust into it by the wife as she bought me a Little Chief for X-mas.

I'm gonna be looking for a little advice from the other northerners here on the board. I had been (and still am) planning on doing my first ever smoke tomorrow(Sunday), however, the temps are only supposed to get into the low 40's. I'm going to be doing a small smoke, just a couple of racks of ribs.

I'm figuring that my Little Chief isn't going to be able to sustain a high enough temperature to get my ribs done. How long do I smoke them in the smoker for before moving them to the oven? Also, is the 3-2-1 method still the suggested method for smoking ribs in this situation?

Welcome aboard from a fellow NDer from Mandan and a fellow little cheif user......I have done a few mods to my little cheifs, I added a larger element to them and also made a temp control unit using a temp plug from an electric frying pan..............pm me if you need any help with your little cheif.........I also made an insulated box for it to help smoking in colder temps..............
 
Welcome to the smf RedFrog. Lots of nice people on here to help you with any questions you might have. I'm sure Kookie can help you out with your smoker as she has a couple of the same kind. Be sure and take Jeff's eCourse also.

welcome redfrog and yes the 3-2-1 will work for the ribs in those temps-glad to have ya aboard.
 
Welcome to the forum. Glad you joined the family. There are alot of people with smokin smarts here. Don't forget to post some q-view pics of your smokes. We all like to drool.

First up..... Welcome to SMF and glad you are with is !!!

I grew up 26 miles north of you in Starkweather, then for a few years in Devils Lake, for the last 23 years I have been in Fargo, now I am moving north of Minot into the Glenburn area. I love North Dakota !!!

I have never used a Little Chief but have always had an interest in trying one.

My suggestion is to have the Little Chief in a area with no wind and give the ribs 2 to 2 1/2 hours of smoke with an internal smoker temperature hopefully at 225º or close, then after that follow the 2-1 in the oven. Just my .02 cents.....
