Hello from northeast Indiana. I have been attempting learn the art of meat smoking for about a year now. I have been both successful and very unsuccessful at times. I started off smoking meats on a Weber smoker I bought at a garage sale. I then upgraded to the Oklahoma Joe Longhorn with modifications. I have recently added to my arsenal a Pit Boss 820 pellet smoker. Plus I just received a new Char-broil infrared gas grill for those quick jobs. So far I have done a few butts, a brisket, and several ribs, and bear can chicken. I am trying to get better every time and maybe compete in small contests someday.
