another new member from n.y.

  1. hello all,old to forums,new to smoking. I fish alot ,but don't like eating them. Gave some steelhead to a neighbor who had it smoked by a guy in a wet cardboard box on a hot plate and it was delicious. Figured I would try it-minus the box. bought a smoke hollow 30"elec. and going to get it going today. any thing to do-watch out for when curing it? Wondering how to go about doing small pieces of trout and steelhead without over cooking them. thanks in advance for any advice. dave

    First of all welcome to SMF. Are you going to cure then cold smoke them for snacks, or are you just going to hot smoke them without curing?

  8. hi , was going to try hot smoking,have never heard of curing and cold smoking,but I would try it if you could get me headed in the right direction. thanks,dave

    Welcome to our little family!  Your obsession is our obsession, lol!

    Born and raised in upstate NY, Adams Center, 10 mi. south of Watertown, dad had a meat market there, Fassett's Quality Foods, specialized in home cured and cob smoked hams, bacon... if it moved we cured and smoked it, lol  Done a lot of fishing in Lake Ontario, Pulaski, Sandy Creek, Tug Hill North Woods in Montague county, etc.  Now I'm lazy down here in Fort Worth Texas and go fishing with a friend who has a boat on Granbury Lake and others too.  Crappies don't fight like smallhead bass but the flavor is good!  Used to fish south Sandy Creek right after opening day if the water was low; the smallmouth would come up to spawn and get trapped, couldn't get back to the lake and wow, we'd have full stringers and big dinners!

    Best thing to do is experiment a little and buy some good thermometers and monitor your smoking and cooking to get the right temps without overdoing it - keep good logs and tweak.. yeah, it's going to be rough experimenting all the time and having to eat your errors, but you won't mind... lol!
