Hey all, Just found the site yesterday and spent the whole day reading everything I could. I have told several smoking buddies to get on as soon as they can also. I am in Gilbert AZ just outside of Phoenix. I started with a upright water smoker about 12 years ago. Now I've got a Brinkman side by side, a char griller, and a vermont castings 4 burner. They are lined up like Rocketts. This past weekend I smoked two salmon fillets, brined them over night and gave them a black pepper rub. Sorry no pictures this time but for sure to next time. After that I smoked some salt (Kosher) for about 6 hrs. put it in shakers for some friends and myself. Glad to be here! Gonna try my hand at a Fatty next time. I never heard of that before, but sounds right up my alley.
