Another Midwest cold day brisket

First, I need to thank DoneGoneFat, Weev and Nascott (through DGFat's post) for giving me the gumption to not be such a sissy about the cold weather.
I picked up a 14# brisket at GFS, cut the flat off for other things and got ready for this morning.
It was 25F when I lit things up at 6:30. It was 7:30 by the time the smoker was at temp.
I just went with salt & pepper with no injection this time. The point went in at 8:00.
Got plenty of wood ready for this
Keeping temps was like playing with a yo yo til around 10:00 when things settled down to the 260 to 280 range.
You can't see it, but there's TBS there.
It never really stalled, but took an hour and a half to go from 163IT to 169IT.
I'll be back with more pics..
 
Looking good. Can't wait to get in from hunting for leftovers of my brisket hopefully the kids didn't eat it all
 
Great to hear you decided to do yours.

Looks great so far! I just had a slice of the leftovers that I did not put in the freezer, gosh it was better today than last night

Yeah, it's amazing that just nuking it makes it good again. No kids at home, so I don't have to worry about that, Weev!
Just took it out of the smoker to rest. Seems like it took forever to go from 200 to 203!
I'm inside for good now, though. Brrrr....

I have only made 2 briskets, and have yet to have a brisket sandwich.. I think I am going to have to head to the grocery tomorrow, grab a small tub of potato salad, and then make a brisket sandwich

We went to a wedding in Huntsville, Al last spring and stayed in Fayetteville, TN. Driving around killing time I saw a sign that just said "BBQ". This guy had a converted race car trailer parked in a gravel lot. $3.50 got me a pile of brisket on white bread with a little slaw. Melted in my mouth. Since I started cooking my own that's my favorite way.

Thanks to Maverick remotes I didn't have to hang out in the cold all day, but since I don't have a fancy air controller on my firebox the patio sliding door got a workout LOL!
The brisky made it worth it, though, and I didn't go through as much wood as I thought I would.

Looks good. Cold weather smoking can get pretty brutal and usually takes longer.

Quick question, what brand smokrr is that? The logo looks like Chargriller, but the design doesn't look like the Chargrillers I have seen before.

It is a CharGriller. Model 6125. I saw it at HD last year and it jumped out and grabbed me. It was $299 instead of the $199 you're probably used to seeing. Other than using Permatex Red while assembling, there are no "mods" other than some steel plates for baffling and a charcoal basket. Everything fit well and the doors are aligned and snug. I think it compares with the OK Joe in quality if not size. I love it.
