Hey guys, just wanted to say a quick hello. I've been lurking on the site for a few months now, so wanted to officially get my first post out there. I'm in the Peoria area, and still pretty new to this hobby. I've done one of each of the big hitters (brisket, pulled pork, ribs, chicken, and a fattie) on my 18.5" WSM, and look forward to continued improvement in rounds 2, 3, and so on.
