Made my first 2 fatties today. 1/2 ground beef 1/2 store brand Italian sausage. Stuffed with pepper jack and provolone cheese, green & red peppers and onions. Smoked at 250f for 2.5 hr until IT 165 hickory woodchips. Put in oven at 350 for a few minutes to help crisp up bacon. In plastic wrap in fridge until ready to smoke. After oven. Pan used for oven straight on racks in smoker. After resting cut in half to inspect it.
