Got a young turkey from the store the other day, about 8 lbs.



I've never done a turkey before so I decided I try a brine, I got the recipe here and for the life of me can not remember whos' it was but rest assured you'll get credit where it is due as soon as I find it again

I don't have a bucket so I used a meat lug for the brine and the bird, mixed a double batch to fill it up more. Next time I'll have a bucket but for now I just flip the bird over every couple of hours.



When I do one in the oven I like to use this mix so I figured It would be good for a smoked bird too;

3 tbls of melted butter
1/4 tsp onion & garlic powder
1/2 tsp cajun injector seasoning
1 tsp oregano
1/2 tsp thyme
1/2 rosemary

Mix it all together in the butter and baste the bird, then on to the grill.

About 2 hrs in now and heres a quick peek through the smoke

Done! about 4.5 hrs total then I lowered the grate and grilled it over direct heat for 10 minutes to crisp up the skin, turned out pretty good for a first try
