Happy Friday Everyone, First, I know I am just introducing myself, but these forums and you fine folks have already helped me out a great deal with getting started. My name is David and I live in Thornton, CO. I am new to smoking. I started doing my research on Monday (found this site thankfully), bought a Brinkmann Smoke N' Pit Pitmaster charcoal/wood smoker (decently priced side box smoker) from Home Depot ($149). When I start a hobby, I generally move fast. I am having the family over this Saturday and I'm going to attempt a brisket, pok shoulder, and some pork ribs. I'm trying the methods and recipes that Jeff posted (bought the rub and sauce recipe), although I think I want to try the 3-2-1 method on the ribs. I've heard apple juice is a good thing to add when you foil them up? Also, I've read a lot about the various mods people have made to their smoking rig. For the sake of time, I think I will extend the smoke stack before this Saturday, and try to tackle some of the rest another weekend. Does that sound like the right one to get done first?
