Hey all!

It's going to be a warm one today here in Raleigh, upper 90's and humid!!! Sounds like a good day to smoke.

Today's menu...

Brisket (I rubbed it friday night and kept it in the fridge until this morning spraying with apple juice and Wild Turkey (I am all out of the Capt

Dutch's Wicked Baked Beans (I already put these on the smoker to act as a heat sink as the water pan doesn't seem to be controlling the heat as well as I'd like)

Apple Carmel Cheescake (I found this recipe here on the SMF a while back and have been dying to try it.)

I'll get some Q-View up soon. I'll get some pics on the next spritz.
 
I would like to have some with dinner, but alas, I only had an airplane bottle of the stuff so it got sacrificed to the meat. :(

Guess it's going to have to be beer with dinner as all the hard liquor is gone!!!!!

Now it's off to the cooler with you!!!!!!

Hit 185* and now it is resting nicely in the cooler with a couple of towels on top. Unfortunately I completely mis-timed my cooking, Dinner won't be until about 7:30 when the wife gets home!!! The chef might have to test it though! ;)

Now it's time to make the cheese cake!

Oh, I forgot, I managed to make time to watch my friend (Matthew Johnson) in the X Games, install a new garbage disposal, and go across town to let my parents dog out!!!
