Another Beef Tenderloin

Hi All! Smoking some beef tenderloins at work again for a late lunch.
I've posted a couple of these.
Last one, I over shot my finished temp.
Just put them in the smoker and will update when done.
Running the smoker around 150-180, Going to finish on the grill.
Let's see if I can manage to not over do these!;)

Nice! I love beef tenderloins. I usually cut them into 4-5" steaks and bacon wrap. Also found a good deal at a local Vietnamese grocery. They sell big long ones cryovaced for $4.99/pound. I don't think they know what they have, Asians usually don't eat a lot of beef!

Well, we just finished eating.
Here's the result:
I pulled them off the smoker at an IT around 115-120.
Put the loins on a hot grill until IT hit around 135.
Rested for 20 min.
Not overdone like last time.
Had the thin ends for a couple people that don't like as much pink.
Flavor was really good and everyone enjoyed.
Here's my work set up and the money shots!

Mmmm. Beef tenderloin is the king of cuts in my opinion. $8.99/lb is a good price. Have to wonder where you work that you cook this feast for lunch.
I am not supposed to tell this, so don't let on. Last time I bought a whole tenderloin I cut it into ~2.5" steaks, smoked and grilled two of them and vac-packed the rest for the freezer. On my B-day I requested SWMBO pull a couple from the freezer for my "special dinner." She searched both freezers to the point of emptying them out and couldn't find them. Apparently she had tossed them thinking they were something outdated. Sweet girl felt so bad she went to the market and bought two filets at market price, $19.95/lb, for my dinner.

Bob's produce has been pretty good on price for us.
I work for a small family company.
When we have some downtime, we like to have some fun. The owner buys the meat and plans on leftovers...
Of the 6 pieces, we had 3 left.

What store is it?

It's just a local independent place that features Spartan brand foods.

The meat is from Packerland , a company in Green Bay and Michigan that processes on site to sell everywhere in the country. It's like the 3rd largest . This is probably select grade beef. Not great. Untrimmed is cheaper too.
