Hey everybody. I've been lurking here for a while now, so I figured it was time to introduce myself. I'm fairly new to the smoking game, but after being on the forum for a few weeks, I at least know enough to look like I know what I'm doing. (Isn't that the most important part?

) I have to say, this is one of the best internet communities I've ever seen.

Santa came early for me this year and I got a shiny new MES 30, so that's what I'll be doing most of my smoking with. I did a pretty good job of getting rid of that shine this week with some chicken thighs and wings, but my first big boy smoke is going to be on Sunday. Planning on a rack of St. Louis style spare ribs using the 3-2-1 method and a batch of Dutch's Wicked Baked Beans, so be on the lookout for some Q-View. Similarly, I will be using the 5-4-3 method on a 12 pack of cold adult beverages.

Thanks for teaching me so much already and I can't wait to learn even more from all you meat smoking masters out there.

I have to say, that 5-4-3 method sounds like a great idea.

 You might want to start from 12 and work your way all the way down though. I think you will have better results.

Shnax, Glad that you are now an active member. You will find that you are in some fine company with that MES. Plenty of guys here that can give you plenty of tips on pulling some great 'que out of that smoker.

First off welcome to SMF there shnax . You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
