I ground, stuffed, and smoked some andouille a couple of weekends ago. Momma was out of town for the weekend and I could make a mess without getting "the look".

Turned out pretty good for a first effort with a Kitchen Aid stuffer. A 5# vertical stuffer is next on my wish list!

Now I need to do some gumbo or jambalaya. I'm on a carb restricted diet for my diabetes and have to plan my overload meals! Soon, definitely soon!
