I just bought a MES 30 (digital) after using a Big Chief for years. The wife and i are HUGE smoked food fans and excited to start this new adventure!
Ive been reading on here (AWESOME Forum BTW!!) about AMNS vs AMPS and would like to know what direction we should go? We will mostly be smoking meats (briskets,ribs,pork butts etc..) but would like to also dabble in cold smoking a bit also.
Anybody have a pic of a AMN in a MES? What size do we order 5x8? and what happens with the chip tube?
What are some of the other things we will need? and what are some of the mods we can make on this unit to improve its performance?
