Doing some wings in my Masterbuilt gasser but using the AMNPS cage at the bottom underneath the burner. Oh and did I tell you that it finally decided to start raining? Hey! where's my golf umbrella? Smoking with Hickory pellets.

Hey @cmayna I was doing some research and have some questions for you if you don't mind. First, how do you like the needle valve mod? I already ordered one but can I really get temps around 220*? How about blow out?
And your smoke stack, is there much affect? I was smoking some eggs and noticed the ones closer to the back were not as smoked as the ones up front. Does the stack help with the odd draft?

I'm going to steal your umbrella idea too, just cause its cool!

    Thanks for your help!

I must admit that I haven't smoked anything less than 225 for quite some time, thus I haven't been using the needle valve.  It is currently wide open and I just turn down the gasser's control knob.  I really like the smoke stack I installed.  Sometimes wish it was taller, so all I do is to slide a round shaped piece of cardboard over the current smoke stack and suddenly it's 2 feet tall.  My smokes are pretty uniform but I can't tell too much about the smoke color until I do some cheese.  Even then most of the blocks are pretty uniform.

Thanks for the quick reply! I would be just fine with 225* or really anything below 250* With my current set up my temps just keep climbing. Hit around 310* last night while I was smoking some chicken breast. Tried messing with the tank valve but that was such a pain and constantly needed adjustment. My valve should be here tomorrow and you having giving me hope. I think I will do the stack as well to try and even the smoke. Did you just block off the original upper vent? Again thank you!

I have it opened just a tad.   Hmmmm, sure sounds like a needle valve might help you big time.   If you end up choking the flame down a lot, consider building a wind protector around the bottom of your smoker to help prevent a gust from blowing out your flame.

This coming weekend while smoking some Salmon nuggets in one of my big Chief smokers, I'm going to do some more bacon wrapped chicken chunks in my gasser.   Dual smoking....gotta love it.

That's what I'm hoping for! Thanks for the idea about a wind block, I'll have to keep that in mind. I haven't tried any fish yet but gotta say I will do those bacon wrapped chicken nuggets sooner than later! Hope you do a Q, happy smoking!
