I have the 5x8 amnps and apple pellets.  I am not getting any apple smell or taste with this set up.  When I use apple chips with my previous set up, I could both smell apple in the smoke and taste apple in the finished product. In the beginning, I did not have blue smoke, but after adding more intake and exhaust in the smoker the smoke turned blue. Any ideas on what is going on with my smoke?

Set up:

Smoke Hollow electric smoker

5x8 amnps

apple pellets (ordered with the amnps)
 
Hey CT.  Not sure what your problem is.  I use an AMNPS and always get good smoke flavor.  Is your top vent open all the way?  That will give you good flow and keep the fresh smoke moving over your meat.  Also, the brand of pellets you're using can affect the results.  I always make sure any pellets I buy are 100% wood with zero fillers--Todd's pellets have given me the best results.  Also, in my MES 30, I find that if I use chips instead of pellets, I get a lot heavier, thicker smoke.

What brand of chips were you using and what was your previous setup.

What I'm wondering is maybe your other chips were artificially flavored.

Just changing the brand of chips to Todd's pellets which are just what they

say, no extra flavors.

If your still not getting the smoke you want you can light both ends of the

AMNPS.

Gearjammer, I was using smokehouse products apple chips. They claim they are 100% apple chips. I think I am getting the correct amount of smoke, just no apple taste or smell.

Garryhibbert, I am using pellets that came with the amnps. I was thinking that amnps brand pellets would be best to try first.  Also, my smoker did not have any vents before so i made a 2" vent at the top (all the way open) and a 1 1/2" at the bottom (all the way open also).  Before adding these vents, my smoke was never blue. Now I have a steady stream of nice blue smoke.

I have tried hickory and apple pellets that were bought from amnps. There is not much difference between the two in taste or smell.  They both taste good, but nothing like using real apple chips.

We really liked the apple taste in the pork.
