Hi,

Just joined the forums, after lurking for the past few weeks. My wife and I are from Hawaii, but we live in Oklahoma now, OKC area.

New to smoking. Leaped on the Academy Sports black Friday deal and got the 40" Gen1 MES for $199, but I haven't had a chance to even unbox it yet. It's my first smoker.

I've got a ANMPS on order, and a 40# bag of Perfect Mix pellets standing by, but haven't decided what to try first. My wife loves smoked salmon, and I justified the smoker investment by tempting her with that, so salmon might be my first effort. Also interested in doing my own ribs, brisket, bacon and chickens. I roast a chicken in the oven about once a week, liberally seasoned with kiawe-smoked salt, and I'm intrigued by the thought of putting some actual smoke on the bird instead of smoked salt.

OKC can be a bit breezy - will that mess with my smokes? Do I need to wrap the smoker to keep the wind off it? Or maybe put it in the utility shed and pipe the smoke out? Or just not worry about it?

Welcome to SMF, Beau.

Wind can be a bit of a pain to our chamber temps. There are several methods of combating it, obviously putting your smoker indoors safely or have walls around it is your best bet. Hanging up blankets or wrapping in a welding blanket works as well.
