Hey Y'all! As the title says I'm an airplane and firetruck guy. My name is Howard and I am from SC. I am a rookie smoker, and I have a Masterbuilt 40. I have smoked on it a few times and it does good. One thing that stands out to me right away is that it only gets up to 275 degrees. How do y'all compensate for temperature differences in recipes? I saw a brisket recipe that calls for 350 degrees... any help would be awesome!!!
