Air flow and brined meats..... a problem I found today...May 2014

OK..... so Bride wanted a BIG TURKEY for today.... we took out a 22# bird.... quartered it and brined it.... Had to, the thing wouldn't fit in the MES 30.......

So I got the AMNPS in the smoker, during the preheat to 275 for 2 hours, and the pellets were in it.... they dry very well when I do that.... using Pitmaster's Choice by the way.....

Everything was fine.... Dried the bird at 160 with no smoke... added the AMNPS to the mailbox..... everything was great..... turned up the smoker temp to 250 ish..... still OK for about an hour...... then the smoke diminished to almost nothing.... checked the AMNPS and it was barely smoking... pellets hadn't hardly burned..... added some flame with the butane torch... they lit really fast so I knew the pellets were dry....

To make a long story short, I lowered the smoker temp to 180...... VOILA !!! smoke started rolling out the exhaust..... Took the turkey out of the smoker to finish in the oven and everything is smoking along just fine.....

SOOOOOOOOO......... the moisture in the bird started to turn to steam..... water to stream is about 1600 to 1 expansion..... I figure, and my little temp. test proves it to me, that the expansion to steam stopped the air flow into the mailbox..... once the air stopped, the burning pellets ran out of oxygen....

Use this information freely, but don't give me any credit, for I may be wrong AGAIN !!!!!

Dave's rule # 47..... "Keep the temp below 200 degrees F whenever there is water in the smoker.... expanding "water to steam" screws stuff up" ..... That you can quote.....
