Hi I'm Dylan, live on vancouver island in British Columbia Canada. Just built a smoker out of a keg from my brewery with help from this site! Never smoked before but as soon as I learn more about the process and buy some smoke chips I'll be smoking up a storm with the abundant amount of fresh trout and venison available to me here! Any start up tips are appreciated! Cheers!
 
Welcome Dylan!  Tell us more about your keg smoker or ask us some questions.  It's difficult to just give you some tips without knowing more.

well I'm going to go with charcoal as space is limited, going to try some rainbow trout I caught! any suggestions on wood/temp/brine? 
 
Are you looking to mostly hot smoke or cold smoke - or some of each? As you mention charcoal I guess you are going to at least do some hot smoking.
 
Hey beard of wonder, welcome to the site.  What's the name of your brewery?  I'm probably familiar with your brews.  As far as smoking trout goes I'd suggest alder for smoke, goes well with fish.  I've never smoked trout, just salmon, but with temps I start low (100*F) and slowly go up from there.  My brines are for salmon and might be a little overpowering for trout.  That said this is my go to:

                                                     30oz brown sugar

                                                     8oz kosher salt

                                                     2tsp garlic powder

That'll make way more than you'd need but its a start.  Try typing "trout brine" into the search bar at the top of the page, and see what happens.  Hope this helps, good luck with your first smoke on your new build.  Looks like the south island's gonna have some nice weather today, comes my way tomorrow.  Figures.  Keep on smokin.

itll be all hot smoke as its a very small space and theres not separate firebox. will have the coals and wood about a foot under the racks. will be trying it today to see how bad i can mess it up! haha
