After much agonizing, I finally pulled the trigger...

    ...on  a new Smokin' Tex 1440 Pro. I'm so excited I can't stand it, it's like being 8 years old the week before Christmas.

    Checked out the MES 40 at Sam's this afternoon (last one left and  good deal at $269...they're sold out everywhere), and the my tendency to be cheap when it comes to shelling out a good chunk of money nearly won out over my desire to get everything I wanted in a smoker. I even bought the Sam's membership and waited in line to buy the floor model, since that was the only one left. But after giving the thing a full physical exam right there in the store, I changed my mind at the last minute, came home and ordered the ST1400. Got a very good deal of $469, normally 699.

    Thanks for all of y'alls help here! Now it's on to find the first of may recipes I'll be experimenting with all summer...

    Congrats and welcome to SMF!  Are you totally new to smoking, or just getting a new smoker?  Don't forget to post pix of the new addition to the family and your first smoke!

    I've been using a cheap propane smoker since last summer, so not completely new. The problem is it's totally inconsistent with temps, and I'm tired of having to adjust the thing every 15 minutes to get the temp where I need it to be...so I decided to go electric. Now instead of worrying about the meat not drying out, I can concentrate on perfecting my recipes and techniques.

    You are going to love it - it comes with several blocks of wood to season it - I did 3 smokes to get a good seasoning before doing my first smoke and I am really glad I did. The door seals much better and the box really took the seasoning well

    The next step for you is to get the A MAZE N SMOKER so you can do cold smokes like cheeses and fish - I used the cold plate for a year and just recently Todd Johnson started producing the AMS and it has changed my smoking for sure

    Thanks, Scarbelly! I'm looking forward to it. Had some meat done on one of these recently, and it was unbelievable.

    That brings up a good question: Why exactly do you season a smoker if the meat never touches the metal? I understand for a cast iron skillet, but what does the process do for a smoker?

     To burn out anything left over from the shop - oils, cleaners, paint, etc.

    Also smoke & PAM adds a protective coating over the metals & paint so the food doesn't taste like graphitti.
