So i got 2 nice sized chunks of bluefin tuna the other day. Im wanting to smoke them this weekend but i have never smoked fish before and i dont want to mess this up. Anyone got a good recommendation on how to accomplish this?
I have never seen Bluefin that brown color before, is it freezer burned? Should look like this...
That being said, I would brush it with a mix of 1/4C Soy sauce, 1/4C Mirin (sweet sake), 1Clove minced Garlic, 1tsp Grated Fresh Ginger and 1/2tsp Sesame Oil. Dust with Sesame Seeds and place in front of a Fan for 30-60 minute to dry the surface and form a Pellicle. Smoke at 250 to 300°F for 30 minutes. Rest 15 minutes and slice thin with a very sharp knife. The outside 1/4" or so will be cooked and the interior completely raw an cool. Serve with Steamed Rice, topped with diced Cucumber and Scallions and additional Soy Sauce to dip. You can also smoke at 225°F to an IT of 130 and rest 30 minutes before slicing. The interior will be cooked but medium (slightly pink). I can't say how long because I never cook Tuna that long...JJ
