depends how done you like em.........when i first started doing em, i did them bout 2 hours at 250.....kinda soft.........so now i do em bout a hour, still a crunch to em..........
 
Another thing to consider is the longer they cook the milder they get. Do you want a little more heat or do you want it mild??
 
That's the way we do them too. Bout an hr. I think the longer you smoke them the less heat they have. I like a little bite and crunch to them. Plus, IF, there are any left over, they nuke better too.
 
But how was the bacon? I would think that might be soft after only one hour. I have taken to doing them on the gas grill. 325º @ 40 minutes. Bacon is nice and crisp too.
 
i smoke em for 5 hrs or round there bout 225* till fresh bacon is done leave some viens and seeds in the ones i want a little heat or they will be pretty mild.
 
I have better luck with an indirect method when cooking jalapeno poppers, ABT's or what ever you want to call them. I cook until the bacon looks edibile... about an hour or so. I agree with the statement about the longer they cook, the milder they get.
