Howdy,

I've always had a passing interest in smoked meats, primarily focused on eating them.  With the advent here in Austin of Franklin's, la Barbecue, Stile's Switch, and on and on...I've decided to dive into the creation of my own.  I started reading these forums a couple of months ago to help decide on a smoker, as well as get a few concepts in my head.

This morning I had a Yoder 640 delivered to the house, and right now there's a 7.5 lb pork butt smoking away.  I've never smoked a piece of meat before myself, so I'm excited and a little apprehensive with how it will turn out.

I followed Aaron Franklin's video/recipe (the PBS series, the pulled pork one at   ) for pulled pork, since I've had his at the restaurant and loved it.  If I can get anywhere in the ballpark, I'll be ecstatic.

Looking forward to getting a lot of practice in with my new smoker, and making some big strides in the quality of my output. Now that I have a real smoker, I hope that what I read on these forums can be practiced, and maybe contribute a little back.
