a third of a brisket

    my dad just brought me over about a third of a brisket. (about 3 lbs)
    i have never done a brisket, so do u think i would cook it as i would a full brisket, just a shorter cook time? also, say i cook this thing 225-250, about how long do u brisket cookers think it will take to finish up?

    How is it going? Brisket sounds good.. I have only been smoking for a short time so am sure there will be alot of more experienced people come along to help you out. Now what I would do is just smoke it like I would a big brisket. My self I would just get the smoker up to temp and the meat and that should work out I would think..I hope I have not said any thing wrong. But there may be a better way of doing it..that is the thing about this forum is there is always good people on here with good info.. have a good smoke..

    I start testing for doneness at 180 degree.I like the temp probe to go in like a knife thru warm butter.Lotta time they are done at 205 degree.

    You could always sear then smoke it.Be done in hour and half.

    I cook em to temp not by time-since i wrap em and let em sit at least an hour.

    hope u have rubbed it by now-unless u searing first-I like to sear than rub-gives a good bark-than throw that baby in the smoker at 250ish and let it go till temp-depends if sliceing or pulling it-good luck I sure will turn out good.

    I've had 3-4lb ones take 6 hours. It's more about the thickness than anything. So don't get too frustrated too early. Hang with it.
