A pig's (nose to) tale - skirt meat with mushroom sauce

    No grilling / smoking today. Making sausage, so we needed something quick and easy. No marinade. Skirt was seasoned, pan fried, shitake mushrooms sauted with onion in the same pan. Deglazed with some stock. Pulverized the mushroom/onion mixture, sliced the meat and voila.
